Ethiopian Yirgacheffe is a light-to-medium-bodied, balanced coffee with a distinctive flavor. It has a mild floral aroma and a citrus-like finish as the cup cools. It is best roasted to a medium (city) roast to allow its bright and almost lemony flavors to shine through.

Yemen Mocca - 3.68/lb.
This coffee is why you roast at home and buy a grinder! The rich collage of earthy, nutty, chocolatey, spicy and floral flavors is amazing and it deserves to be ground just before brewing a great medium-bodied cup of delicious coffee. A lighter city roast brings out the spicy flavor; a darker full city brings out the chocolatey flavor. Let it rest for at least a day before grinding. The color will not be uniform across the roasted beans as it is a naturally processed coffee. Some of these beans are also small enough to get stuck in an Alpenrost drum.

Foggy Morning Blend - 2.56/lb.
A typical morning coffee blend has a light, acidic and overall brighter flavor and uses primarily Central and South American coffees. Our blend is all that usually mixed with a slightly darker-roasted Sumatran that weighs on your tongue like a blanket of fog that gently filters out the new morning sun... or something. Just drink it. You'll love it. With the green, all the coffees are blended together and will roast in a home machine just fine. If you would like to take it a bit darker, feel free! :)

Mexican Chiapas (organic, shade grown) - 1.9/lb.
This organically-grown bean is from the Mexican state of Chiapas near the border of Guatemala. It is a light and acidic coffee with a delicate body. Light-to-medium bodied coffee drinkers will truly enjoy this! They'll probably enjoy it more knowing it's organically grown in the shade of the standing rain forest. Yes, I know Mexico is in North America, but it's in my Central American classification 'cause I didn't want another category :)

This is a Swiss Water decaf with the hallmark acidity and pungency of the Central Americans. The SW process makes it a bit less flavorful, but it's still a good, sharp cup without the caffeine! Roast - late city for really sharp coffee, into full city for a bit more flavor (let rest ~24 hours for more development).

Hawaiian Kona Extra Fancy - 9.38/lb.
"Extra Fancy" is the highest grade and most prized coffee coming from Hawaii. These trees are grown in dark volcanic soil at high altitude in the natural shade of mango, macadamia nut and avacado trees. Follow this ideal situation with a careful attention to post-harvest processing and you end up with a superb coffee. It brews a clean, medium body cup with nice acidity with a hint of spice. The aroma is also amazing! (Full city for best flavor; City roast for a more acidic cup; produces a sweet dark roast if you dare burn this gorgeous bean).

Monsooned Malabar - 1.9/lb.
This is a very peculiar bean, to say the least. The warehouses in India are opened up and the monsoon rains are allowed to wash over the coffee for months, producing a rather large, pale bean with very earthy flavors. While the smell of the freshly-ground roast is incredible, the taste is light and musty. It is typically used in blends, but some brave souls choose to drink it straight. If very earthy, funky coffee is your thing, you might find yourself among the brave enjoying a cup of nice full city roast (almost Vienna) Monsooned Malabar!

Sumatra Decaf - 2.63/lb.
This is a deep-flavored decaf, truly representing the Sumatra flavor and body. It's methyl-cloride processed so it retains its flavor and aroma. If you like the slight chocolate finish and heavier mouth feel of a regular Sumatra, but want an after-dinner cup, here's your product! Roast to full city -- but carefully since decafs are dark and drier to start with!

Sumatra Gayoland (organic, fair trade, shade grown) - 2.93/lb.
This coffee delivers a very earthy, full-bodied cup with a very complex flavor. It is not for the faint of heart or for light, acidic coffee lovers. Anyone who enjoys a rich, complex heavier-bodied coffee with a naturally chocolatey finish will fall in love with this coffee! As an added bonus, it's organically grown under the canopy of rain forests without deforestation of our precious Earthly resources.

Brazil Monte Carmelo - 1.8/lb.
This Brazilian coffee is a very mellow medium-bodied, low-key coffee. While some do drink Brazilian coffees straight, they are typically used as blend bases as they have no specific qualities of their own. Not all Brazilians are this way, however; "Bourbons" such as Monte Allegre are very distinct and _do_ stand on their own as an excellent coffee and lend wonderful qualities to blends!

Columbia Medellin Supremo - 1.98/lb.
While the Coffee Federation of Columbia typically amasses the country's coffees, dumps them into a big factory and sorts the entire lot for quality, this is a bean from a private farm and mill in the southwestern part of the country. It is a medium-bodied, classic coffee with no overbearing qualities and is an excellent selection for any coffee drinker.

Columbia Taloca (DECAF-MC) - 2.08/lb.
This coffee, like its Popayan caffeinated counterpart, is from a private farm in Columbia. The MC decaffeination process leaves the natural oils to be reabsorbed back into the bean without washing them away as some other methods do, so the flavor is left in the coffee. This brews a medium-bodied, classic cup without all the caffeine.
