We want to make sure your coffee arrives at your door as fresh as possible. That's why we only roast it after you order it. We label it with the roast date and pack it in a heat-sealed reclosable, zipper-seal bag designed to maintain freshness. An embedded one-way valve allows carbon dioxide produced by the roasted coffee to escape and keeps the oxygen and moisture out.
 
Our coffee is packaged in 16 oz. bags. This is 25% more than the typical 12 oz. packages often sold by specialty coffee roasters. We start with over a lb. of green (water is expelled from the bean in the roasting process) so that the final roast is a full 16 oz. This is important to keep in mind when comparing prices.

This washed African coffee has a complex flavor, a unique fruity undertone and a wine-like acidity. It has a gentle, round body with a slightly fermented aftertaste and a muted blueberry finish.     Ethiopia Yirgacheffe
Ethiopian Yirgacheffe is a light-to-medium-bodied, balanced coffee with a distinctive flavor. It has a mild floral aroma and a citrus-like finish as the cup cools. It is best roasted to a medium (city) roast to allow its bright and almost lemony flavors to shine through.

    Tanzania Peaberry
Coffee cherries are actually dicotyledone, meaning they have two halves to their seeds (the actual coffee beans). Peaberries occur as roughly 2% of a normal coffee crop and grow as a single bean instead of two halves. This produces a smaller, more dense and supposedly more flavorful bean. While every coffee has peaberries, Tanzania (and a few other countries/farms) separates, bags and sells them as a separate product. I'm not sure why they do this, but I'm very glad they do! This is a very buttery coffee with a fantastic aroma. It brews a very smooth, mellow, medium-bodied cup with a flavor that lingers long after that cup is empty. It has the hallmark acidity and fruitiness of the Africans as well.

This is the perfect blend of organic Sumatran and naturally processed Yemen coffees, each roasted to its best stage. It is the blend that most people think of when they think "coffee." We have come to think of "mocha" or "moka" or "mocca" or "mokha" (ad infinitum) as meaning "chocolate flavored" but it is nothing more than the name of the ship port in Yemen that is no longer used. Likewise, "Java" is an island in Indonesia, but people use the term to describe coffee in general.     Hawaiian Kona Extra Fancy
"Extra Fancy" is the highest grade and most prized coffee coming from Hawaii. These trees are grown in dark volcanic soil at high altitude in the natural shade of mango, macadamia nut and avacado trees. Follow this ideal situation with a careful attention to post-harvest processing and you end up with a superb coffee. It brews a clean, medium body cup with nice acidity with a hint of spice.     Monsooned Malabar
This is a very peculiar bean, to say the least. The warehouses in India are opened up and the monsoon rains are allowed to wash over the coffee for months, producing a rather large, pale bean with very earthy flavors. While the smell of the freshly-ground roast is incredible, the taste is light and musty. It is typically used in blends, but some brave souls choose to drink it straight. If very earthy, funky coffee is your thing, you might find yourself among the brave enjoying a cup of nice full city roast (almost Vienna) Monsooned Malabar!

While the Coffee Federation of Columbia typically amasses the country's coffees, dumps them into a big factory and sorts the entire lot for quality, this is a bean from a private farm and mill in the southwestern part of the country.     Columbia Taloca (DECAF-MC)
This coffee, like its Popayan caffeinated counterpart, is from a private farm in Columbia. The MC decaffeination process leaves the natural oils to be reabsorbed back into the bean without washing them away as some other methods do, so the flavor is left in the coffee. This brews a medium-bodied, classic cup without all the caffeine.
